Ay there are still a good deal things I have not perfected. One of them is making sweet potato fries. Every time I go to a restaurant and I eat some the fries are crispy and perfect. Yet when I try to duplicate them at home with baking it just does not work. I thought baking them would be healthier. Well this time I gave in and I fried them. I figured the healthiness in the sweet potato would counter act the frying process. They were a bit better, but not perfect. I got a tip that they need to be double fried to get perfect.

We make sweet potato sticks all the time. We sort of bake/fry them to get them crispy.

We put the sticks into a plastic bag, season with sweet paprika and creole seasoning. Coat the sticks with a little olive oil. Place them on a baking sheet sprinkle with salt and a little more olive oil if needed. Bake them and then when they are close to being done top them with grated parmisian cheese and bake 5 more minutes until crispy. The olive oil seems to crisp the fries up if you use it liberally.

Yep, hubby has found that the double-fry method is the best. He says this is the way for all french fries. I don't like to fry things myself, but it is tasty. I am wanting to try that Cap'n Crunch fried Chicken that JustJenn mentioned a while back. Sounds oddly good to me.

I've never tried to make them myself. I can never get any kind of fries to be as crisp as restaurant fries.
Oh, Ani, now I really want some of those!

I love sweet potato fries too, but you're right, they never come out quite as good when you bake them at home! Here's a hint though: I really like them when cooked on the grill. Par-boil for a couple minutes, cool, toss with olive oil and seasonings, and throw in the grill to brown up. I do this with butternut squash too, yum!

I agree that they're hard to get right ... I've yet to make a perfect batch! But I love sweet potatoes so I don't mind eating them in any form.

I do bake mine and I love the way they come out. You have to cook them at a very high heat like 425-475 dpending on your oven for about 20-25 minutes. It also helps that they are all coated in olive oil.

I never liked sweet potatos, but I've had sp fries twice in the past month. They are super! I want to try them at home.
