Y...I do bake mine and I love the way they come out. You have to cook them at a very high heat like 425-475 dpending on your oven for about 20-25 minutes. Here's a hint though: I really like them when cooked on the grill. Par-boil for a couple minutes, cool, toss with olive oil and seasonings, and throw in the grill to brown up. We sort ...We make sweet potato sticks all the time. We sort of bake/fry them to get them crispy. <BR/><BR/>We put the sticks into a plastic bag, season with sweet paprika and creole seasoning. Coat the sticks with a little olive oil. Place them on a baking sheet sprinkle with salt and a little more olive oil if needed. Bake them and then when they are close to being done top them with grated parmisian cheese and bake 5 more minutes until crispy.
