Applesauce Pancakes

Who doesn't have some apple sauce from a kids snack laying around. I know I do. My youngest always picks it at the store for snacks but never eats it. And I wanted to find a way to use them up. And these apple sauce pancakes are fantastic. Also I found out a little cinnamon goes a long way!



SUNDAY MORNING APPLESAUCE PANCAKES  Adapted from Applesauce Pancakes


Combine in bowl:

1 c. white or whole wheat white flour
1 tsp. salt
2 tsp. baking powder
1 tsp. baking soda
1 tbsp. brown sugar

Combine in separate bowl:

2 eggs, well beaten
2 tbsp. oil

Add liquids to dry ingredients and stir only til mixed. Add 1/2 cup applesauce (or more). Sprinkle with cinnamon or cinnamon sugar.

Bake on heated griddle.

Serves 4.
