Potato Omelet

This omelet is something my mother made often while I was growing up. It's so very easy to put together. Chop a small potato into miniature pieces. Saute in light olive oil till golden. Meanwhile scramble two eggs. Add salt and pepper. Add egg mixture to the pan and cook till eggs are not runny. Delicious.
