I made a new breakfast dish, Ham Quiche. I like to try to use up ingredients I have before having to go grocery shopping.

I had ham, eggs(always) and mayo on hand. The mayo was supposed to make the quiche fluffy. I was wondering if he would be able to taste the mayo in the dish. Niel is not a fan of it except in egg or chicken salads.

I think next time I will have to try sour cream. Niel could taste the mayo, although I couldn't.

But it made i did make a nice and airy dish.



Breakfast Quiche
Serves 6
1/2 lb. cubed ham or bulk breakfast sausage
3 eggs
1/2 c milk
1/2 c mayonnaise
1-2 c grated cheese(I used cheddar)

Prep
Move oven rack to the middle of the oven.
Preheat oven to 325 degrees.
Cube ham, if using. If ham is watery, microwave it for a couple of minutes
and drain off the water.

Assemble
Saute sausage if using, and drain off fat. (I used ham and just threw it in the bowl.)
Mix eggs, mayo, and milk in a bowl.
Add meat and cheese
Place all ingredients in a lightly greased pie pan and bake 50 minutes.
Let cool 5 minutes before cutting and serving.

I totally cannot locate the link I got the above recipe from I think it was a college professor who has her own recipe site, but I did find another site for dedicated to breakfasts.

Oooh... that looks very good. I should really be better about using up ingredients in my fridge/pantry. Must make that a priority. It would probably reduce our grocery bills (eek!).
