This month's Weekend Cookbook Challenge was cooking/baking something from a new cook book and was hosted by Sara from I Like To Cook. I had a dilemma since I received a few new cookbooks for Christmas. I ended up choosing one Niel gave me called Best Ever Three & Four Ingredient Cookbook. I was won over by the limited ingredients the recipes required. The challenge of making something yummy with only a few supplies. I decided to make Chorizo Hash. It was super easy to make and delicious! I served it for breakfast, but I don't see why it can't be eaten at any meal.

Chorizo Hash

1 pound of chorizo
1 pound of precooked potatoes(I microwaved mine)
A couple of scallions chopped
salt and pepper to taste
Olive oil to coat a large pan

Heat up chorizo for 8 to 10 minutes. After it's done put in a separate plate. Add olive oil and heat the potatoes. Cut up the chorizo and return back to the pan with the potatoes. Cook for 5 to 8 minutes or till potatoes are crispy. Salt and pepper and add scallions.

That sounds super good. I love cookbooks like that. I had one that was all 3 ingredient recipes, but I lost it in a move. Thanks for taking part in WCC!

That looks pretty darn tasty! I am a big fan of the 4-ingredient cookbooks. I should pull mine out and try out some new ones (the perils of having waaaay too many cookbooks, but you know what I'm talking about, I'm sure ;)). The simple food is often the best!

Chorizo was a breakfast staple at my grandma's house. Chorizo with egg, chorizo with potatoes, chorizo with beans. I didn't appreciate the flavor until I was older.

Hey, yesterday I made chilaquiles with tomatillo salsa for dinner. I thought of you.

i sooo can't cook so i really need a cookbook like that, i will have to check it out. when i was growing up i loved chorizo and i love hash so this would be an all time favorite to me. i was reading the earlier post as well, i am sorry for the loss of your grandmother Rose, my grandmother's name is Rose too.
