Niel and I frequently enjoy salad with our dinner. It is the same salad always: red leaf lettuce, tomatoes, cucmber, and feta cheese lightly flavored with home made salad dressing. But I wanted to make salad the main course. So last week we did just that by enjoying Tabouli, pasta salad, bean salad, egg salad, tuna salad, taco/steak salad, and Cobb salad for dinner. Light and perfect for Summer.
