I love this apple recipe which I make sometimes for breakfast. I couldn't find my round cake pan so I baked the Puffed Apple Pancakes in a muffin tin. They came out just as good and held up well.

You guys are going car shopping this weekend?
Just driving. We did a lot more work this time around and learned from our last mistake. So we're better prepared. Niel just has to see which of the three he feels comfortable with. So to find a car is a wish for hopefully the very near future.
