The weekend was another good one. I am very happy to have them. Weekends really are a nice break from work. I'll start with Thursday night. Niel and I went to a Cyclones game in Coney Island. I was there for work but then my coworker came and relieved me of my duties and I got to go and sit with Niel for a bit. It really is a nice stadium and the minor leagues are a little more enjoyable for me because I get a sense of what baseball was like in America during its early years. The minor leagues feel more community like and fun. While I feel major league is marred by too much scandal and all about the almighty dollar. Afterwards Niel went to hang out with his brother and Dave.
Friday evening we stayed home because Niel was a little light headed from painting his mom's kitchen ceiling. We were supposed to do it together on Saturday, but Niel got a day off on Friday and offered to do it alone so we can spend time together on Saturday. He's sweet like that. After Niel got home rested and drank lots of water he was feeling better, thankfully. I made a stir fry Asian dish for our dinner. No recipe. It had tofu, snow peas, baby corn, shitake mushrooms, water chesnuts, pureed garlic, left over steak and soy sauce. It was good. For dessert we walked down the block for some ice cream at Carvel. The weather wasn't as oppressive so we sat outside and enjoyed our dessert.
Saturday after errands we went to my parents for dinner. I looked through an old album and played with my parents cat. Afterwards we went to Barnes and Nobel for a quick browse before returning home. We made some mudslides and watched White Chicks on cable. I was very surprised that we enjoyed the movie. I wouldn't recommend getting the T.G.I. Fridays brand of mudslide mix though. Way too sweet.
Sunday Niel did laundry while I cleaned the fridge and the apartment. We also went over to our friends Jennifer and Renzo for a visit. Their daughter got so big. She is a cutie and so smart! Not even a year old yet and she already has said her first words, can walk so well, has learned to make an "Oooooh" sound and then look surprised, waves and can eat by herself. They've got a little genius on their hands.
For dinner since we were still lusting for the pasta that Jennifer made we made pasta. And I don't know what I did differently but this pasta dish came out a gazillion times better than the other times I have made pasta. It had all the same ingredients that all my other pasta dishes did, tomato sauce, sausage, basil, Italian seasonings, garlic, ricotta and mozzarella. I realized then what the difference was. I used bow tie pasta. I remembered Niel mentioning bow tie was his favorite pasta shape. I had purchased some the other day to use for one or two of this week's meals. And it was really a lot lighter in my tummy. The texture was creamy too. Niel was onto something.

Sounds like a great weekend. i've been wanting to make something with tofu but haven't found a recipe yet. Any suggestions? Have a good one!
Thanks Jessica. Ooops I forgot pictures. Yes I'll email you some I have. I love tofu. Happy you are interested. It's pretty versatile. I recommend the hard tofu because it can stand more beating up. LOL.
It was just a little less busy than normal but still nice. Thaks for the help Jess! I usually enjoy Tofu with Asian cooking but that does look really good!
