Chickpea, Olive, Onion and Tomato salad
- Can of chickpeas drained
- Two plum tomatoes chopped
- Half a small onion choppped
- Half a cup of kalamata olives chopped
Chop all the ingredients and mix together. Drizzle with olive oil and lemon juice. Enjoy as a meal or as a side salad.
