Best Spoonbread Ever


love a good spoon bread. Corn mixed with cornmeal mmmm. The recipe is an easy and delicious one to put together. It makes a wonderful Thanksgiving side dish. I sometimes make it for Easter as well. Goes great with ham.






Best Spoonbread Ever

Adapted from FOODday via @SassafrasPDX ~ Sassafras Catering

Ingredients
1 can (15 oz) corn, drained
1 can (15 oz) creamed corn(I added a second can and it cooked fine)
1 cup sour cream
2 large eggs, lightly beaten
1/2 cup (1 stick) butter, melted
1 box (8.5 oz) corn muffin/corn bread mix
1/ 2 teaspoon Kosher salt 
1/4 teaspoon pepper
Ground cinnamon

Preheat oven to 350o F.  In a large bowl, combine corn, creamed corn, sour cream, eggs, butter, corn muffin mix, salt and pepper.

Place corn mixture in an oven-safe baking dish and bake for 45 minutes.

Serve warm with a sprinkling of ground cinnamon. I did not use the cinnamon.
