Zucchini Carpaccio

This is a fast, fabulous and oh so easy salad recipe from Proud Italian Cook. It is a zucchini carpaccio with Parmesan cheese and a dressing of lemon juice and olive oil. I love the complimentary colors of the yellow squash and zucchini. Fantastic!
