Red Quinoa Salad

I got this quinoa salad recipe from Simon, who should be a chef. He had made it for a recent bbq and it was pretty amazing. I was given the OK to share the recipe with you lucky folks. The more vinegar the better as the recipe calls for a half a cup of vinegar to start off with. After that add a teaspoon at a time of each vinegar and adapt to your taste.



Red Quinoa Salad

2 cups red quinoa rinsed 
4 cups water
1 cucumber 
1-2 carrots
1 onion
4 ribs celery
1 green pepper
1 red pepper
1 bunch chopped parsley
Olive oil
1/4 cup Red wine vinegar 
1/4 cup White wine vinegar
Garlic powder
Salt
Mixed peppercorns

Add quinoa and water to a 4 qt pot bring to a boil reduce heat and simmer for aprox 20 mins.  While quinoa is cooking peel seed and chop all vegetables.  When quinoa is done allow to cool (spread out on a sheet pan and placed in fridge to help dry out).  After cooling combine quinoa with chopped veggies and parsley.  Now the olive oil, vinegar, garlic powder, salt and pepper I just eye balled and taste.
