I am trying to include more vegetable as side dishes and so when I came across the recipe for Cauliflower fritters I thought it was perfect.It is another delicious one from Skinny Taste. Cauliflower is such a subtle tasting yet hardy vegetable. You can mix variety of ingredients to it. You can replace the cheese in this with Feta for a more Mediterranean feel. You can add on top creme fraiche and caviar to make it an appetiser. For instance I didn't go by the recipe exactly I was more inspired by it. I used milk instead of water and cheddar instead of Pecorino Romano. Although I love garlic I omitted it this time. The options are endless really.

 Cauliflower Fritters
Adapted from Skinny Tastes

Ingredients:
4 cups steamed cauliflower (roughly chopped)
2 cloves garlic crushed
1 cup whole wheat flour
                                                                2 eggs
                                                                1/2 cup Pecorino Romano
                                                                1/4 cup parsley finely chopped
                                                                1/4 cup hot water salt and pepper
                                                                1/4 cup olive oil In a large bowl

Directions:
Combine cauliflower, flour, garlic, eggs, grated cheese, parsley, salt and pepper. Add water so that batter becomes slightly more dense than pancake batter. On medium-low heat, add 1 tbsp of oil in a 10 inch skillet coating bottom of the pan.Use a 1/4 cup measuring cup to form fritters. You can fit 4 fritters at a time. Cook until golden brown, turn and cook another few minutes. Add a little more oil to the pan, and repeat with the remaining batter. Makes 24 fritters.

Ooh thanks! We will have to try this. We're continuously looking for any way to add more veggies too! I have recipes for cauliflower "rice", "mashed potatoes" and pizza crust I need to try too. ;)
