I've made tatertot casserole but with meat. It was rich and hearty. A meal of it's own because of the ground turkey. But I wanted a side dish version instead. So I searched till I found a recipe omitting the meat. But this recipe still wasn't basic enough for me. So I didn't include the onion topping. And added a can of cheese sauce. My husband loved it. Next time I don't think I will use the cream of mushroom soup. Use a fat free sour cream instead of the light version. You couldn't taste the sour cream was a light version. Nothing was missed. Perhaps next time I will even try to make the cheese sauce from scratch? I think I could use a lighter cheese but would need the whole milk for texture.
