One of my favorite dips is Ajica. In the Balkans it is known is Ajvar. It is made with red peppers, eggplant, garlic and spices. Ajica comes in various levels of spicy. From mild to extra hot. My mother used to make it from scratch. But now we can find it in the Russian stores in her neighborhood as well as the Polish stores in my neighborhood. The texture may be smooth but the flavor is very intense. I like to spread it on bread and have it as an open face sandwhich. I usually keep some in stock in my fridge year round.
