I forgot to mention a few weeks back when I was talking about cornmeal that another thing I use cornmeal for is frying fish. I only fry white fish and the cornmeal gives the fish a much lighter flavor than flour does. Plus a pretty color. Goes great wtih a cold bean salad, or a relatively cold potato and dill salad.

I'll have to try it for Jon! he only likes white fish, and only likes it fried! (just in the pan right?) How much oil do you use? I always make a sloppy mess....I NEED POINTERS! haha

I love the tear drop Steph sent! Everyone has put a small goody in so far....something I didn't expect, but it makes it that more FUN! What a great bunch of girls! I'm glad you are excited about this! LOL

Hey Jes. Yep I fry it in a pan. I use Olive oil and depending on the number of fish in their and the size of the pot is how I determine the amount of oil.Go with about an 1/8th of a cup of oil first and just add as/if needed. I just dip the fish in some whisked egg and then the cornmeal and put it in the oil. The white fish is pretty delicate so I do it gently. And cook till it gets to be that nice orangy color.
