It was funny when we were in Albany in March, how many southern dishes we were able to find. Such as Jambalaya and biscuits with gravy. The first time I tried Jambalaya was also the first time I visited Florida. I was twenty one and on one of my first dates with
Niel. He had tried Jambalaya previously, during a visit to New Orleans and recommended I try it. I really enjoyed it. And I really haven't had good Jambalaya since. And in Albany it was my first time trying biscuits with gravy and it was quite good. I'm going to try to find a recipe for the gravy so I can make some.
