I would like to share some recipes that have been enjoyed in my household as of late. I subscribe to Martha Stewart's Every Day Food magazine and found the first two recipes there. The last one I made up.
Asian Style Steak and Green Beans
3 to 4 pound steak
A pound of string beans
1 cup of soy sauce
2 tablespoons of sesame oil
2 to 3 garlic cloves(crushed) or use garlic powder
2 to 3 cloves minced ginger or use ginger powder
1 tablespoon of Asian vinegar or even mirin
2 tables poons of Asian garlic chili paste
Mix the spices and let it marinade with the steak for an hour. Sear the steak in a pan for a few minutes on each side and finish the cooking process in a 350 oven. The cooking time depends on how well done you like your steak.
The string beans I cooked in the left over sauce a few minutes in a lightly oiled pan. The cooking time for this also depends on how crunchy you like your string beans.
Niel made this last night for dinner. It was so freaking yummy.
Whole Wheat Pasta with roasted eggplant, tomatoes and onion with a side of Sweet Italian Sausage.
1 Medium Eggplant chopped
2 Medium tomatoes chopped
1 large onion chopped
Half a pound of whole wheat pasta
1 tablespoon of olive oil
1 tablespoon of butter
2 tablespoons of Parmesan
A small package of sweet Italian sausages
Cover the chopped vegetables with the olive oil and bake in a 400 degree oven for half an hour.
Cover the sausages in water, add a bit of red pepper to the water and cook on medium heat until the water is evaporated and sausages are a bit browned.
The last ten minutes of the sausage and veggies cooking put the pasta in a pot of boiling water. We put a bit of olive oil in the water so the pasta does not stick and a pinch of salt to give flavor to the pasta. After the pasta is drained put a dab of butter and some Parmesan cheese in the pasta. Niel did this to give the pasta some thickness since the veggie's were not creamed.
Mix the pasta and veggies together when done and enjoy with the sausages on the side and nice bowl of salad.
2 pounds of chicken pieces
one cup of barbecue sauce(your favorite brand)
Mix the two ingredients together and let it cook in a 375 oven for 45 minutes or until chicken is cooked.
We tried to eat it with frozen squash on the side but the squash was gross tasting so we just ate the bbq'd chicken with salad.
