Some seafood recipes I want to share. They have been adapted from SouthBeach.

Stuffed Sole

4 thin cut pieces of sole
1/2 pound of shrimp
1/2 a pound of scallops
1/2 a cup of fennel or a tablespoon of fennel seed
mustard seed(whole or crushed)
celery seed(whole or crushed)
2 cloves of chopped garlic


Sauce for sole
1 clove of chopped garlic
2 cups of chicken stock
1 tablespoon of mustard

Cook the shrimp and scallops with the seasonings and garlic in a tablespoon of olive oil until seafood is cooked thoroughly. About 10 minutes.

Put the mixture in each piece of sole and tighten with toothpicks. Cook in a 400 degree oven for 20 minutes.

While fish is baking prepare the sauce by sautéing garlic in a half a tablespoon of olive oil. Put in chicken stock and mustard and cook till sauce is reduced by half. Pour on top of the soul and enjoy.

Soutbeach Gumbo

1 pound of shrimp
1 pound of scallops
1 Green pepper
1 celery stalk
1 onion
1 leek
1 24 ounce can of crushed tomatoes
Few drops of Worchester Sauce
Few drops of Hot Sauce
Black Pepper
Clove of chopped garlic

Sauté the garlic in olive oil. When golden add the vegetables, black pepper, and cook about 10 minutes. Add the can of crushed tomatoes and simmer for 20 minutes. Add the seafood and hot sauce and cook for ten more minutes.

We viewed Hellboy on Paperview this weekend. I liked it and I didn't like it. I thought it was clever to combine history with fantasy, but I felt the writing could have been stronger.

Thanks. We got used to it. Before we ate a rice, pasta or potatoe with a side item and now we don't. Occasionally we will have whole wheat pita with dinner and a the Special K carb friendly cereal but more often than not its an omolet for breakfast and we're eating fruit again which I am glad about. I think my husband's weight loss is a lot more noticable than mine is but I expected it. Hopefully he'll find out in a couple of weeks about his cholesterol.
