Wow it rained really hard here last night. So much thunder and raining. I kind of expected it a bit with the humidity we had the past few days. But not this much rain. We jumped into an early Summer I guess. But I was on a cooking roll. I made up for the crappy dinner I made on Wednesday night. Will not go into the crappy dinner. But will share the dinner I made last night. Hurry Paella:Chicken flavored rice, with chorizo, shrimp, with a side of corn, guacamole and salad. For dessert blueberries. So good! I wanted to share five other easy and tasty meals. I may have already before. I forget. And I am too lazy to check. But he Hurry Paella and Lamb Curry are definitely new though. Have a good weekend!



Hurry Paella

Cook two packets of Lipton Chicken Rice follow instructions, dice one large tomato and throw in the cooking rice. While the rice/tomato mixture is cooking, cook chorizo, shrimp and diced chicken in a separate pan. The shrimp and chicken will cook with the oil from the chorizo. When the rice and the meat is done combine and enjoy.

Lamb Curry

Braise lamb (or any meat you like) on the bone in three tablespoons of olive oil until browned(I used 2 medium packages of veal) on high to medium heat
Add curry powder as much or little as you like
Add 14.5 can of tomato sauce let simmer for ten minutes on medium to low heat
Add more curry powder let simmer for five minutes
Add half to three quarters of a can of water(use tomato sauce can) let simmer five more minutes on medium to low heat.
Add quarter cup of coconut milk
Taste broth see if needs more curry
Add a teaspoon of Turmeric
Add a can of chickpeas
Total simmer five minutes. Serve with couscous.

Chili Pie from Real Simple

1 lb of sweet Italian chicken sausage(remove casings)
1TB Chili Powder
2 15 ounce cans kidney beans in sauce
1/2 cup hot salsa
1 8.5 ounce box corn bread mix(requires one egg and 1/3 cup of water)
1 cup shredded cheddar cheese
Heat oven to 400F

Cook the sausage over medium heat in an oven safe skillet, breaking and cooking meat until browned. Drain the fat. Add the chili powder and cook, stirring constantly, for 1 minute. Add the beans and salsa. Heat to boiling. Meanwhile, prepare the corn bread mix according g to the label directions. Stir in the cheddar. Remove the chili from the heat and spread the corn bread batter over the chili. Place the skillet in the oven and bake 15 to 20 minutes or until golden. Remove and rest for 10 minutes before eating. Enjoy!

Shepherd's Pie

Take a package of ground meat of your choice(I like Turkey), cook it on the stove top till no longer pink. While the meat is cooking boil a few peeled potatoes. Add the seasonings of your choice to the meat. Add a bag of frozen mixed veggies to the meat and cook for a few minutes. Add a can of gravy to the meat and veg mixture and cook for a few minutes longer. After the potatoes have cooked remove any water from the pot mash them up and add milk and butter. Put the mashed potatoes on top of the meat mixture and bake in the oven at 350 for half an hour or until mashed potatoes are browned.

Chicken Pot Pie

Boil half a package chicken breasts and add ground pepper. Put the chicken in an oven safe bowl. Add a bag of frozen mixed veggies that have been thawed, add a can of cream of chicken soup on top of that. Put Bisquick(follow the instructions on the box) on top of that and bake in the oven at 350 till Bisquick is cooked about half an hour.

Hurry Fried Rice

This is a good way to use up left over brown rice. I scoured my fridge and I realized I had the ingredients to make some Pork Fried Rice. I broiled a pork chop and added BBQ Sauce to it. While the pork was broiling; I cooked the rice in a wok added a whisked egg, some soy sauce, sesame sauce, dethawed chopped carrots and peas. I then diced up the pork after it had cooked and threw it in the wok.
